And that each fish is different as well. Owner of Tartan Fish and Chips, Sam Chan, has spent many years perfecting his recipe, and has it down to a sci ence. Although Tartan Fish and Chips has only been open since October 1, 1998, he was a co-owner of Jasper Fish and Chips in Whitby for a few years, until the commute became too much and he decided to open his own restau rant in Oakville. Well, his venture has proven successful and Oakville appreciates a fine piece of fish, and he loves the customers. "I am dedicated to bringing the best quality of food to my customers," says Sam. "I always ask their opinion and want to know what they think." Upon pulling up to the restaurant, you see painted on the window a sign reading "We use only fresh cut potatoes". This is just the beginning of his commitment to serving the freshest and tastiest food possible. W ith every order of potatoes, they can come from another place. Sam explains, "If they come from a different farm, then they grew in different soil. This means they will have a different colour, a different taste, you have to accqmmodate this." Sam personally taste tests a sample from each different order to ensure perfect cooking each time. W ith the batter, there's a reason you're fish tastes better at Tartan Fish and Chips. The ingredients are the same, but the secret lies in the amount of each individual ingredient used to create the batter, and strict temperature control. The thinner the batter, the less cooking time is necessary, and therefore the end product is a juicier piece of fish with lighter, crispier batter, and not as much oil. But don't be fooled, in addition to fabulous fish they also serve shrimp, scallops, black pudding, Cornish fritters, haggis, and much, much more. Although it's not just the great food that keeps people coming back, the clean, comfortable, fun atmosphere of the restaurant and the friendly service is part of their secret as well.
